Tried a new recipe tonight and love it!!! Good old plant based diet is amazing again! try it 🙂
5 cups of cooked chickpeas
2 cups of corn
2 cups of edamame
red onion, scallion, or garlic (I used all three)
curry powder of your choice
s/p and some evoo
Toss it all in a bowl and mix, top with a squeeze of lemon and chopped cilantro. Yummy!!! I ate this cold and loved it!
